Vegetarian Chili

1 T olive oil
2 cloves finely chopped garlic
1 1/2 cup thinly sliced mushrooms
2/3 cup chopped red bell pepper
1/4 tsp ground cumin
1/8 tsp ground red pepper
1/8 tsp dried oregano
1 28 ounce can stewed tomatoes with juice
2/3 cup baby lima beans
1/2 cup great northern beans rinsed and drained
3 T nonfat sour cream
3 T shredded cheddar cheese
Saute' garlic, mushrooms, onion, and red peppers in olive oil
Add spices, tomatoes and beans
Simmer 15 minutes
Top with sour cream and cheddar just prior to serving
Makes 4 servings at 189 calories each
