Vegan Melted "Cheese" Sauce

1/4 cup cooked, peeled potatoes (can use raw cashews)
1/4 cup nutritional yeast (brewers yeast)
2 cups water
3 tablespoons cornstarch
1/2 cup chopped pimientos
2 tablespoons lemon juice
1/4 teaspoon onion powder
1/4 teaspoon Salt

Blend the potatoes (or cashews) with the water in a blender jar.
Add remaining ingredients and blend until very smooth, with no flecks of pimento remaining. Pour into a saucepan, and cook and stir until smooth and thick, about 7-8 minutes.
Serve at once. Will set when cool. May be reheated. Serve over vegetables or baked potatoes. Hint: Add chopped Jalapenos and a teaspoon of chili powder and it makes a replica of the "nacho" topping from 7-11!
