STRATA WITH CIPOLLINI ONIONS AND ARUGULA

2 tbs olive oil
3 oz arugula
6 oz cipollini ( or any sweet) onions cut into slices
2 cloves garlic
6 eggs
1 1/2 cups half and half (or cooking cream)
2 1/2 oz Asiago cheese (if unavailable use Parmesan)
1 tsp salt
1/2 tsp pepper
3 oz French bread ( or other crusty bread) cut in 1 inch cubes


In saute pan over medium heat, warm 1 tbs olive oil
Ad arugula, saute until just wilted 2-3 mins. drain in colander.
In same saute pan over medium heat warm rest of olive oil add onions and saute until caramelized, about 15 mins. Add minced garlic for 1 min. Remove from heat.
In a large bowl, whisk together eggs, half and half (or cream,) cheese, salt and pepper. Stir in bread, arugula and onions. Transfer to baking pan. cover and refrigerate for at least 1 hour or overnight.

Preheat oven to 350f. Bake uncovered until golden brown and cooked through about 1 hour. Let stand or 5 mins. before serving.

You can add more bread and cheese if you wish.
Don't worry if it looks like there isnt any egg left in the morning the bread soaks everything up!

This is great for a special breakfast
