Seven Layer Dip

2 Ripe Avocados
Tin of Chopped Tomatoes
1 Med.Onion finely chopped
Pkt. of Taco Seasoning Mix
4 Dessertspoons Light Mayonnaise
2-3 Cloves of Garlic
Tin of Refried Beans
300 ml. of Soured Cream or Crème Fraiche or half of each
Grated Cheddar Cheese
Black Pitted Olives - chopped finely
Salt & Pepper
Lemon Juice

Mash or puree the avocados and add the crushed garlic and lemon juice, salt and pepper. Chop onions and olives. Add Taco seasoning mix to soured cream and mayonnaise and blend well together.

If possible use a glass bowl as this shows the layers off best. Start the layers with the refried beans at the bottom; next is the chopped onions; then the chopped tomato; next comes the avocado and then the mix of soured cream, mayonnaise and taco seasoning mix. Then sprinkle the grated cheddar cheese generously on top and finally top it off with the chopped black olives.
Serve with Tortilla Chips.
As a dip it is very useful for Drinks Parties with up to 20 guests as it is filling and very ‘more-ish’. It can also be used as a starter.
