Savory Scones

The Culinary students at Casa Cebadillas, love these scones!
2 1/4 cups all-purpose flour
1 1/2 teaspoons baking powder
1/2 teaspoon sugar
1/4 teaspoon salt
3 tablespoons cold butter
6 slices crispy cooked bacon crumbled
1/2 cup shredded sharp Cheddar cheese
1/2 cup Manchego Viejo Cheese
1 cup whole milk
1 teaspoon finely chopped fresh rosemary
1 teaspoon finely chopped fresh thyme
2 tablespoons olive oil
1. Preheat oven to 475 degrees. Line a baking sheet with parchment or wax paper; set aside.
2. In a medium mixing bowl, sift together flour, baking powder, sugar, and salt. Cut in butter with a pastry blender until mixture is crumby. Add bacon bits and cheese, and spices, tossing to combine. Add milk and 1 tablespoon olive oil. Stir lightly until well mixed, being careful not to over mix.
3. Turn dough out onto a heavily floured surface. Knead dough 4 or 5 times. With floured hands, pat out dough to circle approximately 1/2-inch thickness. Cut dough with a knife into 6 wedges (like a pie). Place on prepared baking sheet.
4. Bake for 10 to 12 minutes, or until golden brown. Brush hot biscuits with remaining 1 tablespoon olive oil.
