Potato Salad

3 kilos potatoes
2 medium onions
6 hard boiled eggs
10 large dill pickles, preferably containing garlic though they are hard to find in Spain
Mayonnaise ( I like Kraft)
dried mustard to taste
salt and pepper

Boil potatoes until cooked, but not mushy; peel and cut in small pieces
Chop onions into small pieces
Chop 5 of the eggs
Cut pickles into small pieces
Mix in mayonnaise until it is the consistency you prefer
Add mustard, salt & pepper to taste
Garnish with last egg

Improves with time - great if you can make it the day before The secret is cutting everything into small pieces so the flavors blend
