(Recipe is Greek)
The Filling:
1 heaping tablespoon butter or olive oil
1 small onion, finely chopped
1 clove garlic, minced
salt & pepper
chopped parsley
1 can (1 lb) diced tomatoes
1/2 cup white wine
Bechamel Sauce can be purchased in a container. Add nutmeg if desired.
1 lb. macaroni
1 heaping tbsp. butter
1 cup grated cheese
To make the filling:
Heat the butter or olive oil in a large frying pan and saute the minced meat & onion until slightly browned. Add the garlic, salt, pepper, white wine, and tomatoes. Allow to cool.
Cook the macaroni in boiling water until soft but firm.
Drain & return to the pan. Add the butter or olive oil.
Butter a 10X 14X the macaroni2 inch baking dish & put in 1/2 the macaroni. Sprinkle w/ cheese & cover w/ the meat filling. top w/ remaining macaroni. Sprinkle w/ cheese & cover w/ the Bechamel sauce. Sprinkle top w/ remaining cheese & cook in a moderate oven for about 45 minutes or until golden brown. Leave for 20 minutes & then cut into square pieces. Serves 8.
