Marie Knighton's BEST EVER LEMON PIE FILLING

1 1/4 C. SUGAR
6 TBS. CORNSTARCH
2 C. WATER
3 TBS. MARGARINE
3 EGG YOLKS
1/3 C. LEMON JUICE
1 1/2 tsp. LEMON EXTRACT
2 tsp. VINEGAR
MIX SUGAR AND CORNSTARCH TOGETHER IN TOP OF DOUBLE BOILER. ADD 2 CUPS WATER. COMBINE EGG YOLKS WITH LEMON JUICE AND MIX IN SUGAR MIXTURE. COOK OVER BOILING WATER FOR 25 MINUTES UNTIL THICK. NOW ADD LEMON EXTRACT, MARGARINE, AND VINEGAR; STIR THOROUGHLY. POUR INTO BAKED PIE SHELL. COOL AND COVER WITH MERINGUE. (I COOK THIS IN THE MICROWAVE. COOK 3 MINUTES AND STIR. IT TAKES ABOUT 9 MINUTES.)
