Don's Coffee Cake

by Karin
(Nerja, Spain)

Grease a 9in or 10in spring-form. Combine 2-1/4 cups flour with 3/4 cup sugar. Cut in 3/4 cup butter. Reserve 1 cup crumbs.

To remaining crumb mixture add 1 beaten egg,
3/4 cup sour cream
1/4 tsp. salt
1/2 tsp. ea. baking powder and baking soda
1 tsp. almond extract

Mix, spread over bottom, up sides of pan

Combine: 1 cup softened cream cheese
1/8 tsp. vanilla
1 beaten egg
1/4 cup sugar

Spread 1/2 of mixture over batter in pan. On top spread 1/4 cup preserves (cherries, berries, etc.)

Combine 1/3 cup chunky almonds with crumb mixture. Sprinkle over preserves.

Bake for 1 hr, test for doneness, then cool cake for at least 1/2 hr. It is even better made ahead of time and refrigerated. Also good for freezing.
