Breakfast - Potato Pancakes

(Betty & Tony's B&B, Orillia, Ontario, Canada)
2 eggs
1 small onion
1 teas. Salt
2 tbsp. Flour
1/4 tsp. Baking powder
3 cups cubed raw potatoes
Pepper
Mixed herbs
1/4 cup of milk
Put all the ingredients in a blender. Blend until smooth. Fry on the griddle slowly until cooked through and browned.
Serve with sour creaam, carnberry sauce and apple sauce.
