Breakfast - Feathered Eggs

1 English Muffin or All Seasoned Croutons
2 slices of finely chopped onion
2 slices of cubed ham
Layer of grated strong old cheese

Break the muffin into small pieces or use a thin layer of croutons and layer into 2 buttered, individual serving dishes. Sprinkle on onion, layer ham and then cheese.

3 eggs
Salt and pepper
Pinch of Herbs de Province (Mixed Nerbs)
sprinkle of cayenne
3/4 cup Half and Half Cream (10% cream)

Beat these ingredients together and pour over the other ingredients. Let stand over night in the fridge and bake the next morning for 30-40mins at 350°F (325°F convection).

This recipe is perfect for two people - I make two at a time and freeze any extra ones. They freeze well and can just be taken out the night before.
