Breakfast - "Eggs-otic"

Creamy Cheese Sauce
1 cup of Milk
3/4 cup Grated Old Cheese
1 tbsp. Butter
1 tbsp. Chopped Green Onions
1 tbsp. Chopped Red Pepper
1 tbsp. Corn Starch
½ Cup Sour Cream
Salt and Pepper
Cook together stirring frequently until smooth. Quarter two hard boiled eggs and arrange in an oven proof serving dish. Pour sauce over and add grated cheese. Bake at 350 degrees for 30 minutes on a tray.
This can also be made as a casserole. Use hard boiled eggs quartered and chopped ham, mushrooms, hash browns etc. in the bottom with the sauce poured over. Add grated cheese to the top and bake for 30 minutes at 350°.
