Breakfast- Canadian Fluffy Pancakes

(Betty & Tony's B&B, Orillia, Ontario, Canada)
3/4 cup flour
2 tsp. Sugar
1 1/4 tsp. Baking Powder
1/4 tsp. Salt
Mix these together in a large measuring cup.
1 large egg
1 tbsp. Cooking oil
5/8 cup of milk
Mix together in a small measuring cup and then add to the dry ingredients and mix. This is enough for 2 people.
Serve with butter and Maple Syrup.
Variations:
Slices of Banana and chocolate chips put in when on griddle.
Blueberries added to the batter.
