Breakfast - Baked Omlette

This makes 3 round Corning Wear 5" pots. Butter generously first. It is served with either a slice of ham or two slices of Back Bacon, a tomato and stuffed mushroom.

6 eggs
½ cup low-fat cottage cheese
½ cup low fat sour cream
2 cup of grated Cheddar cheese or a mixture of cheeses.
Salt and pepper
Pinch of Mixed Herbs

Layer the cheese in the bottom of the pans. Beat all the other ingredients together and pour over the cheese. Bake for 30 minutes at 335° Convection.
