Algerian Style Hummus

Ingredients:
2 cups chickpeas. These can be bought already cooked in a jar.
1/2 cup tahini (ground sesame seeds). This can also be purchased in a jar or container.
2 cloves garlic, crushed
1 tsp. salt
1/4 tsp cumin
1/2 cup of lemon juice.
zhug (Moroccan blend of hot pepper spices also known as bis bas)
parsley finely chopped

Directions:
Blend the chick peas in a food processor until smooth (to your taste) and then slowly add all other ingredients except parsley until the mixture is thoroughly blended.
Before serving spread the chopped parsley on top.
Refrigerate & serve cold with fresh pita bread.

If freshly baked pita bread is not available. Serve with crudites.

This is Algerian style Humous. For Moroccan style humous, add zhug in the mix before spreading the parsley and serving.
