Afelia

by Suzanne Curwin
(Spain)

Afelia (Greek: αφέλια) is a traditional Cypriot food dish/

Serves 4

1 1/2 lbs pork fillet
4 tsp coriander seeds
1/2 tbs. sugar
3 tbs olive oil
2 large onions sliced
1 1/2 cups red wine
salt and pepper

Cut port into small cubes, discard excess fat.

Crush coriander seeds and mix with sugar salt and pepper
rub this over the meat and marinate for up to 4 hours.

Brown meat in 2 tbs olive oil in large skillet.
and transfer to oven proof dish.

Add more olive oil and saute onions until beginning to colour. Stir in wine, salt and pepper and bring to boil.

Pour over meat and cover with a lid.

Bake in 185 c. oven until tender 1 1/2 - 2 hours

( I like to cook it slower, longer but this is a matter of choice)
